Ingredients
For Marinating the Chicken:
- 500g of chicken, broken into medium pieces
- 1 Cup plain yogurt
- 1 tbsp ginger-garlic powder
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 TSP garam masala
- Salt to taste
For Cooking the Rice:
- 1.5 Cups basmati rice washed and then soaked for 30 minutes
- 4 cups of water
- 1 leaf of a bay
- 3-4 green cardamom pods
- 1-inch cinnamon stick
- Salt to taste
For Biryani Layers:
- Prepare two large onions. Thinly cut and then fried until golden brown
- A few fresh cilantro and mint leaves, chopped
- A small amount of saffron is washed in 2 tablespoons hot milk (optional)
- 2 tablespoons of oil or ghee to cook
Instructions
Step 1: Marinate the Chicken
- Within a bowl large enough, mix it with yogurt, ginger-garlic paste, the powder of red chili, turmeric, garam masala, and salt.
- Mix thoroughly and coat the chicken in a uniform coating. Cover the chicken and let it marinate for 30 minutes up to one hour for the most effective results.
Step 2: Cook the Rice
- In a large pan, bring four cups of water to the boil. Include the bay leaf, cinnamon, cardamom, and a pinch of salt.
- Incorporate the rice in the pot and cook it until it’s 70 to 80 percent cooked. It should be done but still has an icy bite. Rinse the rice well and set it aside.
Step 3: Prepare the Chicken Masala
- In a large-bottomed pot, prepare 2 tablespoons of oil or ghee on moderate flame.
- Incorporate the marinated chicken and cook until the pieces of chicken are cooked through and the spice mixture has thickened, approximately 10 to 15 minutes.
Step 4: Layer the Biryani
- Pour half of the cooked rice into the same pan as your chicken masala.
- Scatter half of the fried onions, mint, cilantro, and leaves over the rice.
- Sprinkle the rest of the rice on top Next, add the remaining onion, mint, fried garlic, and cilantro.
- Pour the milk saffron over the top to add a taste and the color.
Step 5: Dum Cooking (Final Steam)
- Cover the pot with a secure lid or seal it using foil to keep the steam inside.
- Cook at a low temperature for about 15 minutes and allow the flavors to marry.
Step 6: Serve and Enjoy!
Flavor the biryani by squeezing it using a fork prior to serving, and garnish with onion and cilantro should you wish.
Tips for the Perfect Restaurant-Style Biryani
- Make use of basmati rice that is high-quality for long, distinct grains with the right aroma.
- Cook the onions until golden brown to give them an authentic and rich taste.
- Do not overdo the layering or “dum” method–this is what allows the spices to meld into every particle of rice.
Enjoy your homemade chicken biryani with a side of cooling raita or a simple green salad. While preparing Biryani at home may require some time, the outcome is a dish brimming with flavor, affection, and heritage.
