Gobi chilli

If you love spicy snacks, Crispy Chili Gobi is the right dish for you! This Indo-Chinese recipe is highly loved by many for its crispy texture and bold flavors. It’s a great combination of crunchy fried cauliflower mixed with a deliciously tangy, spicy sauce. Be it a quick snack or party appetizer, Gobi Chili is sure to impress!

Ingredients:

1 medium-sized cauliflower (gobi), cut into florets

2 tablespoons cornflour

2 tablespoons all-purpose flour (maida)

1 teaspoon ginger-garlic paste

1 teaspoon red chili powder

1 tablespoon soy sauce

1 tablespoon vinegar

1 tablespoon tomato ketchup

2-3 green chilies, chopped

1 onion, chopped

1 capsicum, chopped

Salt to taste

Oil for frying

Preparation:

Wash the cauliflower and cut it into bite-sized florets. Blanch the florets in hot water for 2-3 minutes to soften them slightly. Drain and set them aside.

Make the Batter:

In a bowl, mix corn flour, maida, red chili powder, and just a pinch of salt; add water to make a smooth batter. Dip each cauliflower floret into the batter, ensuring it gets fully coated.

Frying the Cauliflower:

Heat the oil in a pan or wok. When hot, drop the battered cauliflower florets carefully into the oil. Fry them in batches until they are golden brown and crispy. Remove them and place them on a paper towel to drain excess oil.

Preparation of the Sauce:

In another pan, add a little oil and let it heat. Add the chopped onions, green chilies, and capsicum and stir-fry for a minute or until the veggies are soft but crunchy. Add the ginger-garlic paste and sauté for another minute. Now, add soy sauce, vinegar, and tomato ketchup. Stir well to combine.

Combine:

Add the crispy cauliflower florets with the sauce to the pan. Toss everything properly so that the cauliflower florets are well coated by the sauce. Stir-fry for another 2-3 minutes on medium heat.

Serve:

Garnish with chopped coriander leaves and serve hot with any of your favorite chutneys or sauces.

Tips: To make the dish much crisper, you can double coat your cauliflower by dipping them once more in the batter before you fry.

You can also adjust the spiciness by adding more or less green chilies or chili powder. If you want a healthier version, you can bake the battered cauliflower instead of frying.
